Writing a will - which country is it best to follow the laws of?

Question
My wife and I are French but live in Belgium. From what I have read we can choose which country our (yet unwritten) will follows the laws of. Has any body got any advice on whether it should be Belgium or France?

Belgium. As Belgian tax laws will apply on the succession.
See a notary. It's well worth the cost.
