what does "Bouquet" mean for property?

can someone please explain what "Bouquet" system is for property?

here's an example:

Bouquet 50.000€ et rente 950€/mois max ± 13 ans – PEB

what does this entail exactly?

It refers to a property purchase "en viager" where you purchase a property at a substantially discounted price, however the seller can not only continue to live in the property until they die but you have to provide them with a monthly income in the interim. In effect you take a punt on how long the seller will remain alive.

It does not have to be till the death of the seller: you can agree to a fixed period, say 15 years.
