We are moving to the UK (Swiss nationals). I know that we have to de-register in Belgium by our last day. My question is: does UK immigration ever request to see your proof of de-registration from the community that you lived in in Belgium?

You will be seen and treated as Swiss nationals moving to live in UK. The fact that you are Swiss nationals who used to live in Belgium will be irrelevant to UK immigration.
