As a British independent working resident in Belgium without UK/Belgian property, must I accept Belgian law or can I choose, for example, British law where the spouse automatically inherits.

You can so long as you specify this explicitly in your will. If you die intestate or do not specify you want English law to apply (there is no such thing as British law), then Belgian law will apply.
