Jerusalem Artichokes - any good recipes?

Question

Aside from purées and soups, anything interesting? Pickles? Chutneys? I'm going to give the adaptation of Nigel Slater's tartiflette from the Guardian a go but any other favourites? I've just dug up a bumper crop...

BTW, thanks a million for responding to my SOS about my phone not working in the USA last week! I got through on the number you gave me, was told "you must be in Belgium to do this" (I know!). After a bit of discussion, my correspondent subsequently offered to transfer me to someone else and then promptly cut me off! Grrr.

Hi I believe they make good vegetable crisps, but never tried it, just heard it on a radio show once. if you have any spare I'd love a couple to stick in the garden and get my own crop going. Not sure if you recall emails about chickens Im in Terlanen so not so far to swing your way if you have any spares.

I made a pretty good risotto with some last night - I just scrubbed them and slicrd them finely, no need to peel apparently which makes life easier.

They are lovely roasted. Especially good roasted around the base of a chicken!
