One suggestion is the Eastern cantons of Belgium. Eupen, Julevi B&B, www.julevi.be You can walk in the Hautes Fagnes national park close to German border. Otherwise classic Ardennes is the Luxembourg province. See where you can get to by train and then try www.gitesdewallonie.be

There's good walking around Dinant, Bastogne and Spa, all of which are have train connections (albeit slow ones) to Brussels and a range of accommodation. Your only problem will be that a lot of the better walks may start some way outside these towns, so you may need to get a local bus. In my experience the walking routes in the Ardennes are really well signposted and you can always buy a good map in the local tourist office (you can often either get the information on line or order these maps as well) who will also be able to give you advice on how to get to a given trail.
I have to say that all of the best walks I've done in the Ardennes have been in places that are difficult to get to by public transport (around Bouillon and Rochehaut, les Hautes Fagnes, la Roche-en-Ardenne and Houffalize etc). You might want to look at something like Cambio, the car-sharing scheme - having a car will give you a lot more options (also on nice B&Bs in the countryside). It's also quicker (it's only an hour or less to drive to Dinant from Brussels, but it's an hour and forty minutes on the train).

From Dinant, there are good walks in the Mosane valley.
It is in the Flemish Ardennes.
I would like to recommend Vielsalm, in the, ahem, Ardennes proper, that is to say, in Luxembourg Province. Nothing against the Flemish Ardennes, done some lovely walks around Zwalm for example, but...
You can get there by train from Brussels, change at Liège. The train is slow from there to Vielsalm but hey, the scenery is good. You can stop off at Coo and look at the waterfall (there's Plopsacoo there too for the kids).
